Then come the main acts, one by one: a tangy pork neck soup, five-spice salted eggs, smoked duck panang slow-cooked over longan wood, turmeric-fried snowfish with young peppercorns. The showstopper is the river prawn, prepared sous-vide until perfectly tender, then fried golden and draped in rich shrimp-head reduction. Finally, a refreshing bowl of chilled fruit syrup (loi kaew) sweeps the palate clean.
